Healthier Frozen Fruity Yoghurt Bark With Muesli

Ingredients:
(Serves 8)
125g raspberries
1 1/2 cups reduced fat natural yoghurt
1/2 tsp vanilla extract
2 tsp pure maple syrup
1/4 cup Woolworths summer fruits muesli
1/4 cup toasted coconut flakes
Method:
Step 1 – Line a 30 x 20cm baking tray with baking paper, allowing paper to overhang for handles. Using a fork, mash raspberries in a bowl until almost pureed.
Step 2 – Whisk yoghurt, vanilla and maple syrup in a large bowl until combined.
Step 3 – Spread yoghurt mixture over prepared tray. Smooth surface.
Step 4 – Drizzle with puree. Top with muesli and coconut flakes. Freeze for 3-4 hours or until firm. Cut into pieces and serve.
