To celebrate Australia's Healthiest Lunchbox 2023 competition, Woolworths are sharing some of their healthiest and tastiest recipes to inspire all budding lunchbox artists. Have you applied to be Australia's Healthiest Lunchbox in 2023?

Ingredients:
1/2 small avocado (sliced)
1/2 cup red cabbage (finely shredded)
4 nori sheets
2 cup baby spinach leaves
2 tsp reduced-fat mayonnaise
1 cup brown rice (cooked)
2 tuna in oil (drained)

Snacks:
1 cucumber (sliced)
4 kiwifruit (halved into stars)
80g light tasty cheese (cut into stars)
10 no added salt brown rice crackers

Method:

Step 1 – Lay 1 nori sheet on a large piece of plastic wrap.

Step 2 – Wet 1 long edge and top with another sheet, overlapping slightly. Press lightly to stick.

Step 3 – In centre of nori sheet, place half each of the rice, mayonnaise, spinach, cabbage, avocado and tuna.

Step 4 – Roll and fold, then wrap in plastic wrap to tighten.

Step 5 – Slice in half. Repeat with remaining ingredients. Place in bento box along with snacks.
