Sushi Burrito Bento Box
1/2 small avocado (sliced)
1/2 cup red cabbage (finely shredded)
4 nori sheets
2 cup baby spinach leaves
2 tsp reduced-fat mayonnaise
1 cup brown rice (cooked)
2 tuna in oil (drained)
1 cucumber (sliced)
4 kiwifruit (halved into stars)
80g light tasty cheese (cut into stars)
10 no added salt brown rice crackers
Step 1 – Lay 1 nori sheet on a large piece of plastic wrap.
Step 2 – Wet 1 long edge and top with another sheet, overlapping slightly. Press lightly to stick.
Step 3 – In centre of nori sheet, place half each of the rice, mayonnaise, spinach, cabbage, avocado and tuna.
Step 4 – Roll and fold, then wrap in plastic wrap to tighten.
Step 5 – Slice in half. Repeat with remaining ingredients. Place in bento box along with snacks.
