Veggie Rice Salad
Nutritionally approved, full of veg and flavoured with a zesty dressing.
1/2 lemon, juiced
2 tsp Woolworths extra virgin olive oil
1 cup cooked brown rice
1/2 small red onion, finely chopped
200g Solanato tomatoes, halved
1 Lebanese cucumber, halved lengthways, thinly sliced
100g snow peas, trimmed, thinly sliced lengthways
1/2 bunch continental parsley, leaves picked, finely chopped
1/2 cup pepitas, roughly chopped
Step 1 – Place lemon juice and oil in a large bowl and whisk to combine. Season with pepper. Add rice, onion, tomato, cucumber, snow peas, parsley and pepitas, then toss to combine.
Step 2 – Divide rice salad among 2 airtight containers. Cover with lids and keep chilled until ready to serve.
