2 medium carrots, grated
85g Woolworths shredded light tasty cheese
1 free range egg
1 1/3 cup wholemeal plain flour
Step 1 – Preheat oven to 200°C/180°C fan-forced. Grease and line a large baking tray with baking paper.
Step 2 – Place carrot, cheese and egg in a food processor. Process for 30 seconds or until smooth. Add flour and pulse to combine.
Step 3 – Lightly dust a clean work surface with flour. Press out dough until 5mm thick. Using a 6.5cm star-shaped cutter, cut stars from dough. Re-use scraps and cut stars to make a total of 18 stars.
Step 4 – Transfer stars to tray, leaving a 1.5cm space between shapes. Bake for 15 minutes or until crisp and lightly golden. Stand on tray for 10 minutes before transferring to a wire rack to cool. Serve.
